About Wood Pellets
Wood pellets are a great alternative to charcoal, they are much cleaner burning and more environmentally friendly. Wood pellets come in all different sizes and shapes, but the most common ones you will find at your local hardware store are 12″ long wood logs that weigh around 40 lbs. They can be used as is or crushed down into smaller pieces which makes them easier to handle and less messy. If you have a large grill you might want to consider buying some of the larger-sized wood chips that weigh up to 100 lbs.
How Wood Pellets Are Made
Wood pellets are made by crushing hardwood sawdust into tiny pieces with a hammer mill, then blowing the resulting powder through a screen so that it is compressed into small pellets. The process is similar to making paper pulp from wood chips, though it uses less energy than pulping wood and produces smaller pieces of wood dust. The finished product is about one-third as dense as regular sawdust, which means that it will heat and cook more evenly than regular wood pellets.
Wood Pellet Grill vs. Traditional Gas Grill
If you’re just starting out and don’t have a lot of experience with grilling, wood pellets are a great option. They produce less ash than charcoal, which means they’re easier to clean up. Cooking with Wood Pellets vs. Cooking with Gas or Charcoal

Wood Pellets vs Wood Chips

The pellets are very small compared to traditional wood chips so they don’t produce a lot of heat, either.
How to use Wood Pellets in a Charcoal Grill
Before using wood pellets in your charcoal grill, make sure that the smoker box or firebox is clean and free of any residue. You can also try sweeping the ashes out of the smoker box before putting wood pellets in it to help ensure even heating.
1. Use a chimney starter
If you don’t have a chimney starter, you can use an oxygen depletion valve to start the charcoal. This will create more ash and less usable heat.
In addition, using a chimney starter will help ensure the proper burning of the wood pellets.
2. Select the correct air intake
If you’re cooking slow smoked or hot smoked food, you’ll need to adjust your grill’s air intake accordingly. For slow smoking, use an air intake that is 3/4 open and for hot smoking, use an air Intake that is 1/2 open.
3. Place the pellets in the smoker box
Once you have selected your air intake and inserted the wood pellets, close the grill’s lid and start up your charcoal grill. Be sure to adjust your vents as needed to maintain an even temperature throughout the cooking chamber.
4. Open the air intake on your grill
To increase or decrease the amount of air heated in the smoker box below the cooking surface, open or close the air intake below your grill (see image). You may also need to move any obstructions out of this opening if it’s full of ash from previous grilling sessions.
5. Put the wood pellets in the smoker box or firebox
Spread a layer of wood pellets over the bottom of your grill fire and close the lid, if using a charcoal grill. If you’re using an electric smoker, just plug it in and start smoking.
6. Wait for the grill to heat up
Many charcoal grills need about 20 minutes to get fully heated before you can start cooking with wood pellets. If your grill doesn’t have this type of heating, set the temperature using the dial or digital controller and wait until it reaches your desired level.
7. Start cooking food on top of the wood pellets
Once your grill is at a proper temperature, place some food on top of the logs and let it cook for about 4-6 minutes per side, or until the food is cooked to your preference.
How Many Pellets Do You Need?
It’s very important to note that the number of pellets you use will have a huge impact on your food. You want to make sure you get enough wood pellets to smoke whatever meat or fish you are cooking at the time. That being said, it is also best to buy in bulk and save money in the long run.
